Carey was scouted by an agent when she was only eight years old. At nine years old, she made her debut in Shrek The Musical at The Theatre Royal Drury Lane. This role led her into Marta Von Trapp in The Sound of Music at Regent's Park Open Air Theatre where she also reprised her role in the live performance at the Olivier Awards Ceremony at the Covent Garden’s Royal Opera House.

Her talent for acting earned her the role of Grace Beauchamp-Strachan in the BBC TV series Casualty. She portrayed the character for a total of 40 episodes, from 2014 to 2017, and is considered her breakthrough role.
